About Conservera Castreña

Conservera Castreña S.A. was established in 1986. Our factory is located in the coastal town of Castro-Urdiales, more specifically, in the beautiful valley of Sámano. “La Castreña, a synonym of quality” is our slogan and the principle that has governed our company since the beginning. The highest quality Anchovy of the Bay of Biscay also known as Cantabrian anchovy (scientific name Engraulis encrasicolus) is the raw material for our production. The best anchovies are fished during the spring (from April until the end of July), when this migratory species approaches the coast. It is when its meat is at its best conditions, fighting against this wild sea. Experienced sailors brave the sea in this time of storms, to arrive with the prized silvered cargo to the port. Subsequently, comes a handcrafted and centennial process of elaboration in our factory in Castro-Urdiales, Spain. It begins with the heading-off and gutting, the selection of the anchovies by its size, and continues with the salting process, known by the name of “Salazón”. After maturing in a slow process that lasts for at least 6 months, its filleting takes place, which consists of the removal of the skin, scales and separation of the central bone. Then, they are packaged and filled with olive oil, ready to be offered to the consumer. All natural and without artificial additives. All the processes are controlled by specialized personnel, thus getting our brands to enjoy the consumer. Our flagship product is the Cantabrian Anchovies in Olive Oil, marketed under the brand name "La Castreña", in different formats. Among our products you can also find Bonito del Norte in Olive Oil and Pickled, Ventresca of Bonito del Norte in Olive Oil, Cantabrian Anchovies in Vinegar, Sardines in Olive Oil, etc.
