Fabbrica Pienza, located in the heart of the new DOC Orcia, is a pioneering winery in Pienza, Italy. With 35 hectares of organic vineyards primarily focused on Sangiovese, the company also cultivates other red grape varieties including Syrah. What sets Fabbrica Pienza apart is its bold experimentation with a wide selection of white grape varieties such as Vermentino, Viognier, Roussanne, Marsanne, and Petit Manseng.
The winery has garnered attention for its limited production of 40,000 bottles and its commitment to innovation. In 2020, the production operations were taken over by the talented winemaker Tim Manning, renowned for his natural and discreet approach to winemaking. Manning's expertise, honed in Tuscany, Oregon, and New Zealand, is marked by his use of micro-vinifications, long macerations, and the incorporation of the stem inspired by the Méthode Dujac, which he discovered with Pinot Noir in the Willamette Valley and adapted to Sangiovese. The vinification and aging process take place in non-vitrified Nomblot cement tanks, large barrels, and Burgundian tonneaux.
