Founded in 2012, Tatsu-Ya is the brainchild of Chef Tatsu Aikawa, Chef Takuya Matsumoto, and Shion Aikawa. Having honed their skills at prestigious establishments like the Michelin-starred kaiseki/sushi bar Urasawa in Los Angeles, the team sought to introduce authentic Japanese ramen to Texas. Their vision became a reality with the support of friends and family, and Ramen Tatsu-Ya quickly became a local sensation, earning national recognition, including a spot in Bon Appétit’s “Top 50 Best Restaurants”.
